We're sorry to hear that you had trouble with this filling, Beth! Mascarpone cheese can break if over-worked which can cause it to become very soft. The consistency of mascarpone can vary from brand to brand as well which can impact the consistency of your filling. We're glad to hear that you were able to make a second batch that worked out better for you though!
