I was a little concerned making the sponge based on some of the comments...the sponge turned out great! My question is with the filling. The ratios seem way off...2 cups of mascarpone cheese to 1 cup of whipping cream (unwhipped) is pourable, not spreadable! Had to re-do the filling using not even half as much whipping cream. Once that was done, I was able to assemble the cake and it looked similar to what you have in the pictures. The true test will be the taste which will be tomorrow!
