I will throw down for the instant vanilla pudding and Cool Whip "Banana Pudding" because I adore it (here's a hint: use heavy cream instead of milk for the pudding and then make your own whipped cream to fold in).
I have tried making chocolate pudding before and it was a disaster. The end concoction looked like chocolate pudding, had the thick texture of chocolate pudding, but tasted like scorched milk. Yuck. Perhaps this Thanksgiving I'll give this version a try (with a few packages of instant pudding just as back up).
