Nell, it's not really hot enough to cook them, in my experience; it cools down very quickly. But if you have any qualms, simply wait and let the custard cool somewhat before pouring it over the bananas. You could also simply stick to instant pudding, as well; I use that all the time, made with heavy cream and extra vanilla for added richness and flavor. Enjoy - PJH
