Hi Jennie, it depends a little on the temperature of your proof setting. Many ovens have a proof setting that is warmer than is ideal (100°F) for sourdough starter and most bread recipes. However, if your proof setting can be adjusted so that it doesn't go over 80°F, that would be ideal. As far as drying sourdough starter goes, I still think it would be best to keep the temperature below 90°F.
