Went on vacation and decided to try this on hold method....two others on trip had their starter with them :) The drying portion took about 5 days since we were having a wet spring. Just rehydrated as directed. Seemed to take a bit longer than instructions indicated and didn't get as bubbly so I was a little worried. Then when I did step 12, putting back on normal feeding schedule, it went nuts. Rise was three times amount, very bubbly and smelled great. Going to start no-knead sourdough tonight. Thanks for sharing this blog...sometimes things have to be put on hold!
