I'm so happy that I came across this. My starter has, at times, spent months in the fridge and always come back to life.
I lost my first one due to circumstances beyond my control; the half I took was thrown away by someone that didn't know what it was and the fridge quit so the other half definitely didn't survive over two months.
I'm going to keep some dried starter in my pantry now, just to be safe.
Thank you KA, for everything. Your first cookbook turned me into a baker, one good enough to sell 25-30 loaves of sourdough bread and 10 of sourdough carrot cake at a farmers market every Sat. My husband also thanks you, that cake is his favorite.
