As to your comment about the question of how long is the dehydrated culture viable. Consider that Seamus Blackley of Xbox inventor designer fame recently was able to fully culture and create a viable starter from trace amounts found in over 4500nyr old clay bread and beer pots that are Egyptian reflects. Thus it showed that yeast and bacteria strain stored in dry dark conditions can be viable not week months years or even centuries but millenia or in terms of our human life spans, basically indefinitely.
