Hi Kate, as long as your dehydrator doesn't cycle hotter than 95F it should be okay, but we haven't tried this, and 95F is a little warmer than I normally feel comfortable exposing my starter to for an extended time. To be on the safe side you may want to stick to room temperature drying. Or you could try drying a small portion of your starter with your dehydrator and see how well it revives before you consider this method for all your starter. In fact, I normally recommend having some starter stored at the back of your refrigerator as a backup, whenever you dry a portion of your starter. It's always good to cover your bases when it comes to storing starter!
