Hi Larry, you certainly could, although drying your discard(s) will take time, and, depending on how long your discard has been in the refrigerator, may not be as effective as drying more active starter that has been fed and allowed to ripen. Check out these recipes for more ideas on how to use up your discard, and if you find you're producing more discard than you know what to do with you could also consider maintaining a smaller starter.
