Just .so you know, I’ve been using sourdough for about 3 years, and I no longer discard any. I leave the barest scrapings in the jar, and refrigerate it. Then you follow the rehydration instructions. There is a name for this kind of storage. So if you have 1 cup of starter, and you need the 1 cup, just scrape or pour most of it out, leaving the stuff on the sides of the jar, and store the “empty” jar in the frig. It works!
