I *LOVE* this post. Just started baking my own sourdough bread and have loads of questions. Especially because both the sourdough and my Kefir are like pets! what if I go on vacation... (when covid is over) :D Thank you for the wonderful post. I will try it with some sourdough I need to discard, because mine keeps growing... and growing... an growing, faster than I can bake. :).
