Thanks for this article! I have used the smaller starter method and decided to dry what was left from my big starter (after 2 feedings) so I could have a backup. It's drying inside my (off) oven since yesterday, but I checked it this morning and it has a very strong smell. It's not the fruity smell my starter always had, but a smell like the fresh yeast you buy at the store, but way stronger. Is it expected or is my drying starter lost? Thanks in advance.
