I have stored dried starter flakes for about two years. I made the flakes from the residue left over on the containers I was using to maintain the starter. I would let the containers dry out, then peel off the dried starter flakes, before I washed them. I stored up about a cup of them, which I intend to revive this week. No better time to bake than now.
