Hi, Val! If you're not able to bake with your starter right away when it's ripe, you have two options: You can keep feeding it twice daily, discarding before each feeding, until you're ready to have a baking day. Alternatively, you can put it in the refrigerator for a week or so, then bring it out a day or so early, and feed it regularly until it's doubling in volume again.
