Hi Annamarie, we're glad you ask! A banneton is only used when the bread is rising. Since it's made of wood or reeds, if put into a hot oven it would either burn severely and become brittle ash or catch on fire. The 4th photo in this blog shows a loaf being transferred out of a banneton to bake.
