When it comes to drying my starter should I start the drying process when the starter has reached peak or is it ok to dry after it has peaked? Now that it’s cold leaving my starter on the counter it takes a long time to double in size. If I put it in my microwave with a glass of warm water it peaks in about 6-8 hours. Can I dry some after it has peaked or is it better to dry once it has doubled or close to doubled?
