Hi there, Darlene! We do have a Gluten-Free Sourdough Starter recipe available that is created using our Gluten-Free Measure for Measure Flour. Without knowing what your gluten-free flour blend is made of we're not sure if it would work out to make a sourdough starter with, but you sure could give it a try! You can certainly try drying your gluten-free starter, we haven't done it ourselves but imagine it would work just the same as drying a starter made with wheat flour. If you'd like to experiment with making a sourdough starter out of different gluten-free flours, we'd suggest things that are either starches or whole grain rather than nut flours. Happy GF baking!
