Hi Johnathan! If you think about dry yeast that you buy in a packet or jar, it's the same principle. Yeast is only active when it's in contact with water. When dry, it's dormant and doesn't need food. In this case, it's just wild yeast combined with flour and dried out instead of plain commercial yeast granules. We hope this helps to explain it!
