Hi Adir! We suggest freezing the dried whole wheat starter just because whole grain flours can spoil quickly due to the natural oils in the flour. Placing the dried starter the freezer helps prevent that from happening, just like storing whole grain flours in the freezer extends the shelf life of the flour. Kindly, Morgan@KAF
