If your starter looks and behaves like a 100% hydration starter (that's what's shown in this blog post), we think drying it out using the process shown here will be successful, even if it contains some instant potato flakes. However, if your starter is relatively thick or regularly gets fresh additions of instant potato flakes, we can't be sure this drying method will work in the same way. If you're open to experimenting, try drying half of your starter while maintaining the other half. Try reconstituting it and see how you like the results; only proceed with drying more of your starter if you like the way the starter comes back together. Good luck and happy baking! Kye@KAF
