Sure thing, Linda! We recommend keeping some of your starter alive and well (continue feeding it as you usually do) while you experiment with drying a portion of your starter. You might want to try reviving the dried flakes at least one time before you dry it all — that way you can be sure that it'll reconstitute in the way you're expecting before committing to this process.
