After four weeks of getting new KAF starter, and feeding and resting, and baking many, many loaves of bread, I was desperate to take a break. This post is awesome. In addition to being an terrific baker, I think PJ is a magnificently skillful writer. I enjoy reading her posts about anything - even if I don't intend to bake it. And now that I've read through this, and all of the accompanying posts, I'm going to dry only some of my starter. The rest I'm going to use to try the cinnamon raisin bread recipe!
