I'm glad I read this. I have a couple of packets of souvenir sourdough starter that I've been thinking of tossing, but this has me thinking they might still be OK. Guess I'll give at least one a try. I've wanted to try using sourdough as I love commercial sourdough products, but all the upkeep was daunting. Now that I know I can "archive" it if necessary, maybe it's time to take the plunge :-)
