I have been using scales for years to measure flour, but just recently started using them for liquids. I have been amazed at how much variation there is between measuring cups. I have also discovered variations in my ability to consistently measure fluid ounces of liquid. In addition, not every recipe book measures fluid ounces of water to the same standard. I have found variations between 227g-240g for the weight of 1 cup of water. If one U.S. gallon weighs 3785.41g, then one cup should weigh 236.59g
