Phyllis, I suspect the variation comes down to the method used to get the flour into the 1 cup dry measure. The "dip and sweep" method packs the flour as you scoop it out of the container, so you end up more in the 135g/cup range (140g = 5oz). KAF's (120g = 4 1/4oz) is only possible if you physically and lightly spoon the flour into the cup to ensure it isn't packed in, then sweep off the excess.
Sort of like how 1 cup brown sugar, firmly packed, and 1 cup brown sugar, loose, would be very different weights.
