Hi Ms Gael, that's a great question! I think many home bakers didn't have access to digital scales back when our parents or grandparents did most of their baking, but these days inexpensive scales are much more readily available and we've all become a little more aware of how much easier and more accurate it is to weigh our ingredients, particularly flour. Of course bakers in bakeries have been weighing their flour with balance scales for a long, long time!
