Renee, creaming your butter and sugar can help give your cake a lofty rise and a tender texture. If your cake is dry and crumbly, your batter might also be too stiff (try adding additional liquid) or you cake could be over-baked as well. (It's done when a sharp knife or cake tester inserted into the center comes out clean!) You also may have better success using our cake flour, which is known for its luxurious crumb and texture.
