Hi! I’ve made these a few times and they’ve turned out great. I’m wondering how best to do an overnight proof? Do you think it would hold in the fridge for 8-12 hours if chilled right after shaping? With the slow ferment would I give it 10-20 minutes at ~72*F before chilling?

My kitchen is around 60*F at night, so that seems a bit warm to leave out overnight. Thanks for the help!
