You bet they can, Gess! Follow the process you describe, allowing the muffins to rest at room temperature for about 15 to 20 minutes while the oven preheats in the morning. (Give them more time if they don't look puffy, but we bet they will!) Bake as directed in the recipe. Happy baking! Kye@KAF
