This was such a great read. I really like King Arthur flour for baking bread but I learned about the preferred Yeast - SAF Gold Instant, why canned pineapple juice would be used (due to the enzymes in fresh pineapples), and that potato flour acts as a humectant in the rolls. There was so much context in history to this. I was pleasantly surprised. Thanks for sharing.
