SK, if the bottom of the buns are a bit more brown or crunchy that you would like, try placing your pan on another baking sheet when it goes into the oven. This will provide another layer of heat insulation and keep the bottoms from baking so quickly. It shouldn't make too much of a difference what kind of fat you use to prepare the pan; butter, oil, or non-stick spray should all work equally well. Kye@KAF
