Sponges can offer a depth of flavor - and in the case of this recipe the rested sponge gives the yeast a head start for this sweet recipe. If you don't let the sponge rest, you can figure on adding extra rise time to the process, 30 minutes or more for each rise. Happy Baking! Irene@KAF
