I concur--bread flour in the first part doesn't mix well (It's what I had so I used it). You can kind of get it going, but you either need less flour or more water if using bread flour. You then have a hard time getting it to mix with everything else because after sitting for a few minutes it gets quite dry and develops a small crust. I know this from my own experience! Kind of doable, but a bit of a pain and requires tweaking!
