Mary, what flour were you using? If you used bread flour, which is higher-protein than all-purpose, I can see why that starter wouldn't go together. The other possibility is you were perhaps a bit heavy handed measuring the flour. If you didn't measure by weight - did you measure by fluffing the flour up, and sprinkling it into the measuring cup, then leveling off?
