Hi Mia! A vanilla coconut flour cake sounds delicious, but we haven't tried transforming this cupcake recipe into a cake in our test kitchen. Typically going from cupcakes to cake is just fine, but coconut flour behaves differently than regular (wheat-based) flour so we can't guarantee you'll have success with the first attempt. Since there's no gluten in this recipe, the center of the cake may sink slightly. For best results, try using an 8" pan that's at least 2" tall. Bake for around 35 minutes, testing for doneness using a cake tester or toothpick inserted into the center.
