Hi Jill, thanks for the comment. Yes, you're correct in thinking that homemade coconut flour will act much differently than our packaged coconut flour. I honestly can't say what would be the best course of action, but I think you could try adding a bit of tapioca to thicken up the batter or even reduce the egg since you don't have the same flour.
