This brought back such warm memories, no pun intended :-) I grew up across Lake Champlain in far northern NY. Whether with school or Girl Scouts a trip to the sugarbush was sort of a right of passage. I still remember that it takes 8 gallons of sap to make 1 gallon of syrup! Sadly many family operations are closing. Children today go to the store and pick up a bottle of Aunt Jemima or Mrs. Butterworth without ever knowing what REAL maple syrup tastes like or just how much work is involved to produce it. I've tried to explain the process to my grandsons here in California, but maybe I'll share this article with them too.
