I followed your fantastic instructions to the letter, using weights for everything. The cookies came our perfectly, and matched your photos and descriptions every step of the way. I made half plain, half with mini chocolate chips (20g) and chopped dried bing cherries (62g) rehydrated (1 TBSP water) and flavored with almond extract (1/2 tsp). With vegetable sprayed parchment paper, not only did the cookies release when done but could be moved and reshaped while raw. I love that these aren't super sweet -- the chocolate stands out (the raw batter was sweeter than the baked cookies). Great recipe, and wonderful instructions, thanks.
