While there is some variation in egg whites, needing to use double the amount called for seems very odd to us Bill. Often the best way to pin point a possible issue is to call our Baker's Hotline (available seven days a week at 855-371-2253 (BAKE)). With a little back and forth we might be able to narrow down the possibilities and make some suggestions for your next batch!
