Hi there, Sonia! We'd recommend letting the scooped cookies rest for at least a little bit, allowing a crust to form helps with the spread of the cookies as well as the crackly appearance. You may find that the full 30 minutes doesn't work well for your environment though, try 15 minutes to start and see how the first tray of cookies turns out. Happy baking!
