Hi Kendra! You're correct that we really just whisked the egg whites to combine, not to aerate them. We'd suggest doing it by hand as whipping a lot of air into the egg whites could result in a dry batter that you'd wind up needing to add extra egg whites to get to that desired syrup, sticky consistency.
