While we typically recommend experimenting with alternative ingredients if there's something you're hoping to try, we're wary of encouraging you to go ahead with using Swerve (or any sugar alternative) in this recipe. It's known for being particularly finicky, and it takes just the right combination of ingredients to get these cookies to turn out right. (We even wrote a full blog post trying to troubleshoot some of the most common pitfalls.)
