Sadly, Julia, we haven't experimented with coconut or other alternative sugar for the Flourless Fudge Cookies. If Splenda’s 50/50 blend is used some sugar is needed in order for the cookies to spread. Artificial sweeteners don’t melt and spread in the oven the way granulated sugar will.
