If you're having trouble with the dough sticking to the inside of the scoop, try dunking it into a pitcher of hot water periodically between scoops. You shouldn't need to get your fingers "dirty" (doughy) at all. As for your birthday cheesecake, we have a few different resources that you might find helpful.
