The one thing that you didn't emphasize is the importance of consistency in baking. Scoops/dishers make all your baked products very nearly the same size which means that they all cook in very nearly the same amount of time. Without consistency the best you can hope for is a compromise that results in some items over done, and some items just barely done, or not quite done. This does not apply just to cookies. It also applies to cakes, bread, muffins, pancakes, doughnuts, rolls, biscuits etc... If they are not the same size they will not cook up in the same amount of time.
