Rosa, I use a pan spray into my scoop. Works great. After I've used the scoop for about 24-36 cookies I rinse the cookie scoop, dry it and respray because it will start to stick again after quite a few are made. I fill the first cookie sheet and while it bakes fill a second one. In a very warm kitchen I hold the second filled pan in the refrigerator or even the freezer and so avoiding the cookies spreading too much when baking. Also, when I remove the hot cookies from the cookie sheet I always put the pan into the freezer for a few minutes to really chill it before I put the next batch on it because I noticed if you put the cookie dough immediately on a hot pan and it sits waiting to get it's chance in the oven the cookies seem to spread more when baking.
