The number of a scoop indicates how many scoops you would get out of a quart of . . . well, whatever. Thus, a number 30 is slightly larger than 1 fl. oz. (which is equal to 2 Tablespoons). Your number 40 would be just over 3/4 fl. oz. or about a Tablespoon and a half. Hope this helps your search for the prefect size. :)
