I like the pictures of the cookies in the "hexagonal closest packed" arrangement in the upper pictures. As a chemist, I know that this is the most efficient way to space cookies (and also to cut out round shapes.) This pattern makes the most efficient use of space so that you can fit more cookies on the sheet without having them touch and get more round shapes from a piece of dough with the minimum amount of waste. Nature arranges things this way, so it makes sense for us to do it also!
