Cookie scoops are great for shaped cookies, like Russian Teacakes (Mexican wedding cakes). You scoop out the dough first and then you go back and quickly roll them all. They come out uniform and it's much faster than spooning the dough out with a teaspoon. I can have a batch of teacakes rolled and on the pan in a flash! I bake thousands of cookies at Christmas time and couldn't do it nearly as well without my scoops and parchment paper. It helps that I have 15 baking sheets too :)
